Zucchini Boats

Ingredients
  

  • 4 medium zucchinis
  • 1 cup cherry tomatoes halved
  • ½ cup crumbled feta cheese
  • ¼ cup chopped Kalamata olives
  • ½ red onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Prepare the zucchini: Wash the zucchinis and cut them in half lengthwise. Use a spoon to carefully scoop out the seeds and some of the center, creating a boat shape. Avoid scooping too deeply so the zucchini remains sturdy.
  2. Preheat the oven: Preheat your oven to 375°F (190°C).
  3. Prepare the filling: Heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic and sauté until softened and fragrant.
  4. Add the vegetables: Add the cherry tomatoes and Kalamata olives. Cook for a few minutes, until the tomatoes begin to soften and release some of their juices.
  5. Add the cheese and herbs: Remove the skillet from the heat. Stir in the feta cheese, oregano, and basil. Season with salt and pepper to taste.
  6. Fill the zucchini: Place the zucchini halves in a baking dish and spoon the filling evenly into each zucchini boat.
  7. Bake: Bake for 25–30 minutes, or until the zucchini is tender but still slightly firm.
  8. Garnish and serve: Sprinkle with fresh parsley and serve warm
